In einer Region, die traditionell f\u00fcr ihre Zitrusfr\u00fcchte bekannt ist, hat sich Antonio vor mehreren Jahren f\u00fcr einen anderen Weg entschieden: Er baut Maracujas (und sogar Papayas!) an.<\/p>\n<p data-path-to-node=\"5\">Ein wesentlicher Teil unserer Zusammenarbeit besteht in der pr\u00e4zisen Bestimmung des Erntezeitpunkts. Unsere Teams f\u00fchren direkt im Feld Messungen des Zuckergehalts durch. Mithilfe eines Refraktometers wird der <b data-path-to-node=\"5\" data-index-in-node=\"210\">Brix-Wert<\/b> ermittelt, um sicherzustellen, dass die Fr\u00fcchte die erforderliche physiologische Reife und das volle aromatische Profil erreicht haben. Erst bei Erreichen dieser Grenzwerte wird die Ernte begonnnen. In dem Video unten seht ihr, wie unser Kollege Angelo, diese Messungen vornimmt. Es macht gro\u00dfen Spa\u00df, denn man schaut buchst\u00e4blich in die Zukunft.<\/p>\n<h3 data-path-to-node=\"6\">Reifemerkmale und Etymologie<\/h3>\n<p data-path-to-node=\"7\">Ein wichtiges Qualit\u00e4tsmerkmal der Maracuja ist die Beschaffenheit der Schale. Anders als bei vielen Obstsorten gilt hier: <b data-path-to-node=\"7\" data-index-in-node=\"123\">Je ausgepr\u00e4gter die Faltenbildung der Frucht, desto h\u00f6her ist der Zuckergehalt.<\/b> Durch die leichte Verdunstung w\u00e4hrend des Reifeprozesses konzentriert sich der Fruchtzucker im Inneren, w\u00e4hrend die S\u00e4ure dezent abnimmt. Es gibt zwei Ernten pro Jahr &#8211; eine in den Wintermonate und eine in den Sommermonaten. Vor allem im Sommer, sind die Fr\u00fcchte &#8222;runzliger&#8220;, da die Fl\u00fcssigkeit durch die W\u00e4rme schneller verdunstet.<\/p>\n<p data-path-to-node=\"8\">Wusstet ihr, dass der Name \u201ePassionsfrucht\u201c sich von der christlichen Ikonografie ableitet. Spanische Missionare im 16. Jahrhundert interpretierten die komplexe Bl\u00fctenstruktur als Symbole der <b data-path-to-node=\"8\" data-index-in-node=\"225\">Leidensgeschichte (Passion) Christi<\/b>. Die Filamente der Bl\u00fcte wurden mit der Dornenkrone assoziiert, die drei Narben mit den N\u00e4geln des Kreuzes und die f\u00fcnf Staubbl\u00e4tter mit den Wundmalen.
