That was the &#8220;lightbulb moment&#8221; when Johannes decided to look into quinoa\u2014specifically, whether this pseudocereal could actually be grown in Germany. Along with his co-founder Simon, it didn&#8217;t take long after finishing their Master\u2019s to realise it was definitely doable.   <\/p>\n<p data-path-to-node=\"5\">We caught them on the very last harvest day of the season. Especially when it\u2019s hot and dry, you\u2019ve got to get the quinoa out of the fields fast. Moisture is the enemy here, as it can ruin a delicate crop in no time\u2014quite a challenge during such a damp summer. What makes Johannes\u2019 method stand out is that once harvested, the quinoa is dried immediately rather than being washed. This doesn&#8217;t just save heaps of water; it\u2019s also incredibly energy-efficient. The process prevents mould and preps the grains perfectly for processing, all without putting unnecessary strain on the environment.      <\/p>\n<p data-path-to-node=\"9\">Johannes explains that the European demand for quinoa\u2014especially in Germany\u2014really took off over a decade ago, leaving Andean farmers in a real financial bind. Massive plantations were set up to meet overseas demand, shifting local economies so much that quinoa, once a staple food, has become almost unaffordable for the people who live there.  <\/p>\n<p data-path-to-node=\"13\">To tackle this, Johannes and Simon have branched out, and their range now includes innovative bits like vegan bolognese and crunchy quinoa muesli\u2014proving just how versatile this locally grown grain can be.
