En una regi\u00f3n tradicionalmente conocida por sus c\u00edtricos, Antonio decidi\u00f3 tomar un camino diferente hace varios a\u00f1os: cultiva fruta de la pasi\u00f3n (\u00a1e incluso papayas!). <\/p>\n<p data-path-to-node=\"5\">Una parte crucial de nuestra colaboraci\u00f3n consiste en determinar con precisi\u00f3n el momento de la cosecha. Nuestros equipos miden el contenido de az\u00facar directamente en el campo. Con un refract\u00f3metro, se determina el valor Brix para garantizar que la fruta haya alcanzado la madurez fisiol\u00f3gica necesaria y haya desarrollado todo su perfil arom\u00e1tico. La cosecha solo comienza una vez alcanzados estos umbrales. En el v\u00eddeo a continuaci\u00f3n, pueden ver a nuestro compa\u00f1ero Angelo tomando estas mediciones. Es muy divertido, porque literalmente est\u00e1s mirando hacia el futuro.     <\/p>\n<h3 data-path-to-node=\"6\">Caracter\u00edsticas de maduraci\u00f3n y etimolog\u00eda<\/h3>\n<p data-path-to-node=\"7\">Un rasgo de calidad importante de la maracuy\u00e1 es el estado de su c\u00e1scara. A diferencia de muchas variedades de fruta, aqu\u00ed se aplica lo siguiente: <b data-path-to-node=\"7\" data-index-in-node=\"123\">cuanto m\u00e1s pronunciadas sean las arrugas de la fruta, mayor ser\u00e1 el contenido de az\u00facar.<\/b> Debido a la ligera evaporaci\u00f3n durante el proceso de maduraci\u00f3n, el az\u00facar de la fruta se concentra en el interior, mientras que la acidez disminuye sutilmente. Hay dos cosechas al a\u00f1o: una en los meses de invierno y otra en los de verano. Especialmente en verano, los frutos est\u00e1n m\u00e1s \u00abarrugados\u00bb, ya que el l\u00edquido se evapora m\u00e1s r\u00e1pido por el calor.   <\/p>\n<p data-path-to-node=\"8\">\u00bfSab\u00edas que el nombre de \u201cfruta de la pasi\u00f3n\u201d deriva de la iconograf\u00eda cristiana? Los misioneros espa\u00f1oles del siglo XVI interpretaron la compleja estructura de la flor como s\u00edmbolos de la <b data-path-to-node=\"8\" data-index-in-node=\"225\">Pasi\u00f3n de Cristo<\/b>. Los filamentos de la flor se asociaron con la corona de espinas, los tres estigmas con los clavos de la cruz y los cinco estambres con las llagas.
