Talons aiguilles, cheveux longs et blonds, sourire \u00e9clatant, B\u00e9atrice aurait pu \u00eatre h\u00f4tesse de l\u2019air ou assistante de direction dans le service financier d’une importante entreprise am\u00e9ricaine et travailler au 12\u00e8me \u00e9tage d\u2019une tour de la D\u00e9fense \u00e0 Paris. C\u2019est d\u2019ailleurs ce qu\u2019elle f\u00fbt dans une premi\u00e8re vie. Jusqu\u2019en 2011 exactement. \u00ab\u00a0Dans la finance, j\u2019avais l\u2019impression de crever. Un jour j\u2019ai vu un reportage sur V\u00e9ronique Laz\u00e9rat<\/a>, la papesse du safran en France, j\u2019ai tout aim\u00e9 chez cette femme m\u00e8re de 5 enfants, j\u2019ai d\u00e9cid\u00e9 de me lancer.\u00a0\u00bb<\/em> Si B\u00e9atrice n\u2019a jamais \u00e9t\u00e9 agricultrice, elle a la main verte et surtout une folle d\u00e9termination.<\/p>\n

Du jour au lendemain la belle blonde potasse tout ce qu\u2019elle trouve sur le sujet \u00ab\u00a0j\u2019\u00e9tais compl\u00e8tement obs\u00e9d\u00e9e\u00a0\u00bb<\/em>, convoque le conseil de famille, part se former chez cette fameuse V\u00e9ronique et, en juillet 2012, revient le coffre charg\u00e9 de 10 000 bulbes de safran \u00e0 Ch\u00e9zy-sur-Marne dans sa nouvelle maison.<\/p>\n

La premi\u00e8re ann\u00e9e, on obtient 2500 fleurs avec 10 000 bulbes. En ann\u00e9e 2, le bulbe produit 3 fleurs, en ann\u00e9e 3 une dizaine.<\/figcaption><\/figure>\n

Sa demeure picarde compte un terrain d\u2019un hectare tout pr\u00eat \u00e0 accueillir les crocus. Reste \u00e0 enlever quelques arbres, \u00e0 labourer\u2026 Les agriculteurs du coin viennent donner un coup de main, Christophe son mari s\u2019y met aussi. La premi\u00e8re ann\u00e9e, B\u00e9atrice plante 1000 m2 de bulbes. La suivante, elle ajoute 5 planches de culture, celle d\u2019apr\u00e8s 10 planches encore. \u00ab\u00a0Aujourd\u2019hui j\u2019ai 30 000 bulbes je m\u2019arr\u00eate l\u00e0.\u00a0\u00bb<\/em><\/p>\n

A regarder ses ongles impeccables, on se demande quel est son secret. \u00ab\u00a0Je mets toujours des gants pour d\u00e9sherber mais il faut bien avouer que la culture du safran ne demande pas beaucoup d\u2019entretien.\u00a0\u00bb<\/em> En fait, il faut planter les bulbes vers la Saint-Jean, attendre que l\u2019\u00e9t\u00e9 se passe tranquillement, \u00ab\u00a0les bulbes roupillent sous la terre \u00bb<\/em>, se r\u00e9jouir des pluies de septembre qui font \u00e9clore les fleurs et venir les cueillir pendant le mois d\u2019octobre. \u00ab\u00a0L\u00e0 c\u2019est chaud, je travaille jusqu\u2019\u00e0 23 heures tous les soirs.\u00a0\u00bb<\/em><\/p>\n

\"B\u00e9atrice,<\/a>
B\u00e9atrice, heureuse productrice.<\/figcaption><\/figure>\n

Ce jour d\u2019octobre, comme tous les jours de ce deuxi\u00e8me mois d\u2019automne, B\u00e9atrice part faire le tour de son mini-champ. Un genou au sol, elle pince d\u00e9licatement les fleurs violettes entre son pouce et son index pour les cueillir gentiment. Un bouquet se forme dans son panier d\u00e9gageant une odeur enivrante. \u00ab\u00a0Les fleurs de safran ont deux vertus : antid\u00e9pressives et aphrodisiaques mais pour les femmes seulement. Pendant les stages de V\u00e9ronique, les hommes ont int\u00e9r\u00eat \u00e0 assurer.\u00a0\u00bb<\/em> De son c\u00f4t\u00e9, \u00e7a semble plut\u00f4t bien se passer. Christophe soutient \u00e0 fond sa reconversion et semble heureux de faire partie du projet.<\/p>\n

5 grammes de safran frais donnent 1 gramme de safran s\u00e9ch\u00e9.<\/figcaption><\/figure>\n

B\u00e9atrice d\u00e9pose son butin sur la table et va chercher une paire de ciseaux \u00e0 ongles.\u00a0 Objectif : lib\u00e9rer le pistil, ce fameux filament rouge, 3 brins dentel\u00e9s et pliss\u00e9s longs de 3 \u00e0 4,5 cm. \u00ab\u00a0Il y a des tonnes d\u2019arnaques dans le monde du safran. Un vrai safran se reconna\u00eet \u00e0 ses 3 stigmates brique sombre, fins et \u00e9vas\u00e9s \u00e0 leur extr\u00e9mit\u00e9. Certains n\u2019h\u00e9sitent pas \u00e0 teindre des poils de ma\u00efs ou des bouts de plume. Quant \u00e0 la poudre de safran, il s\u2019agit parfois de brique pil\u00e9e.\u00a0\u00bb<\/em><\/p>\n

Mais il n\u2019y a pas que des entourloupes. En France, la culture gagne chaque ann\u00e9e de nouveaux adeptes. De quelques dizaines de producteurs identifi\u00e9s dans les ann\u00e9es 2000, le Recensement G\u00e9n\u00e9ral de l\u2019Agriculture r\u00e9alis\u00e9 en 2010 d\u00e9nombre 157 exploitations r\u00e9parties sur 18 d\u00e9partements. Pour le moment, B\u00e9atrice est la seule dans l\u2019Aisne. Et plut\u00f4t fi\u00e8re de l\u2019\u00eatre.<\/p>\n

Le safran s\u2019utilise aussi en parfumerie, cosm\u00e9tique, dans les peintures et les teintures ainsi qu\u2019en pharmacie.<\/figcaption><\/figure>\n

Les pistils patiemment extirp\u00e9s de leurs p\u00e9tales et \u00e9tal\u00e9s sur une feuille d\u2019essuie-tout attendent leur d\u00e9part pour le four.\u00a0 Un s\u00e9chage \u00e0 45\u00b0C pendant 25 minutes. Ensuite, ils m\u00fbriront encore un mois en pot avant d\u2019\u00eatre int\u00e9gr\u00e9s \u00e0 de la moutarde, du miel, de la confiture, du vinaigre que B\u00e9atrice r\u00e9alise avec amour dans sa cuisine. \u00ab\u00a0Les produits \u00e0 base de safran me permettent encore mieux de valoriser ma production.\u00a0\u00bb<\/em><\/p>\n

La production annuelle fran\u00e7aise de safran s\u2019\u00e9l\u00e8ve \u00e0 20 kilos. L\u2019Iran, c\u2019est 80 tonnes. B\u00e9atrice, 100 grammes.<\/figcaption><\/figure>\n

Alors heureuse B\u00e9atrice ? \u00ab\u00a0L\u2019an pass\u00e9, j\u2019ai produit 100 grammes de safran, j\u2019arrive tout juste \u00e0 me sortir un Smic mais mes ventes progressent chaque ann\u00e9e. Je ne retournerai pour rien au monde \u00e0 mon ancien m\u00e9tier. Avec ces fleurs, je revis.\u00a0\u00bb<\/em><\/p>\n
