Le diable dont on parle n\u2019a ni corne ni cape rouge\u00a0: c\u2019est un objet rond, beau, en terre cuite verniss\u00e9e, d\u00e9nich\u00e9 dans la boutique de Vincent Pirard, potier de Soufflenheim en Alsace. Il nous avait bien dit que cuisiner avec un diable \u00e9tait promesse de saveurs. Dont acte.<!--more--><\/p>\n<p><strong>Premi\u00e8re sc\u00e8ne\u00a0: pr\u00e9parer le diable (<\/strong>\u00e7a marche aussi pour les <a href=\"http:\/\/www.roemertopf.de\/france\/\">romertopf<\/a>, version facilement trouvable dans le commerce, mais moins personnalis\u00e9e, \u00e9videmment). On prend le diable par la queue et on le plonge dans l\u2019eau. La terre cuite doit \u00eatre imbib\u00e9e pendant un bon quart d\u2019heure, pour faire son office. Car dans le diable, les aliments cuisent \u00e0 l\u2019\u00e9touff\u00e9e, et toutes leurs saveurs restent enferm\u00e9es dans le pot. Il convient de s\u00e9cher un peu l\u2019int\u00e9rieur du diable avec un torchon, et d\u2019y poser les ingr\u00e9dients \u00e0 cuire. Nous avons test\u00e9 avec des oignons au fond (qui tirent de l\u2019eau donc humidifient \u00e0 nouveau le diable), des pommes de terre coup\u00e9es en quartier, quelques rondelles de carottes, des poireaux d\u00e9taill\u00e9s en morceau et une branche de thym. Nous avons referm\u00e9 le couvercle, un peu inquiet de voir le diable en action.<\/p>\n<p><strong>Troisi\u00e8me sc\u00e8ne\u00a0: attendre. Attendre. Attendre.<\/strong> Evidemment notre po\u00eale \u00e0 bois chauffe, et plut\u00f4t bien, mais il faut compter un peu plus de temps de cuisson par cette m\u00e9thode. Nous l\u2019avons dit, la cuisson \u00e0 l\u2019\u00e9touff\u00e9e permet de garder toutes les saveurs des aliments. De m\u00e9moire d\u2019anciens, interrog\u00e9s \u00e0 ce sujet, cette fa\u00e7on de faire remonte \u00e0 bien loin. Comme d\u2019autres concepts forts \u00e9prouv\u00e9s, la cuisson \u00e0 l\u2019\u00e9touff\u00e9e revient \u00e0 la mode, avec la tendance du manger sain et naturel, et aux conseils mitonn\u00e9s aux petits oignons de grands chefs, comme Alain Ducasse par exemple, qui a inspir\u00e9 cette <a href=\"http:\/\/scally.typepad.com\/cest_moi_qui_lai_fait\/2011\/03\/pommes-confites-en-cocotte-romertopf-dessert.html\">recette<\/a>.<\/p>\n<figure id=\"attachment_9822\" aria-describedby=\"caption-attachment-9822\" style=\"width: 700px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/diable-04.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-9822\" alt=\"Un diable qui aurait perdu sa queue...\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/diable-04.jpg\" width=\"700\" height=\"467\" \/><\/a><figcaption id=\"caption-attachment-9822\" class=\"wp-caption-text\">Un diable qui aurait perdu sa queue&#8230;<\/figcaption><\/figure>\n<p>A vrai dire, le grand avantage de cette cuisine est l\u2019absence de mati\u00e8re grasse\u00a0: la vapeur qui se constitue dans le diable suffit \u00e0 cuire sainement les aliments. Apr\u00e8s, on peut ajouter un petit coup de vin blanc avant de reposer le couvercle\u00a0!<\/p>\n<p><strong> Quatri\u00e8me sc\u00e8ne\u00a0: le temps a pass\u00e9, largement de quoi nous documenter sur le sujet.<\/strong> Peu de fumet dans la pi\u00e8ce, nous veillons donc \u00e0 soulever de temps en temps le couvercle du diable pour voir ce qui se trame \u00e0 l\u2019int\u00e9rieur. Un coup de pique dans une pomme de terre nous indique que la cuisson s\u2019ach\u00e8ve. Il aura fallu deux heures \u00e0 feu de po\u00eale \u00e0 bois moyen pour parvenir \u00e0 cuire tout le contenu du diable. Un peu plus qu\u2019avec une cocotte en fonte, me direz-vous, mais l\u2019attente fut cordiale\u00a0!<\/p>\n<p><strong> Epilogue\u00a0: le temps des conseils.<\/strong> Evidemment, le diable \u00e9tant fa\u00e7onn\u00e9 en argile, c\u2019est \u00e0 la fois un bel objet mais aussi fragile. Il faut donc en prendre soin et le poser dans un endroit prot\u00e9g\u00e9 (le notre a retrouv\u00e9 sa place, au-dessus de l\u2019armoire). A la fois, cass\u00e9 pour cass\u00e9, il permettra de retourner chez le potier pour le remplacer\u00a0! On peut cuire des plats \u00e9labor\u00e9s avec de la viande qui est d\u2019une tendresse absolue au terme de la cuisson. Il para\u00eet que le diable peut se poser dans un four \u00e0 moins de 200\u00b0, mais nous n\u2019avons pas test\u00e9.
