Ils seraient arriv\u00e9s en Europe il y a plus de 2 000 ans, par les routes commerciales reliant le Moyen-Orient et la Perse, et se sont \u00e9panouis dans les r\u00e9gions s\u00e8ches et ensoleill\u00e9es.<br \/><br \/>Aujourd\u2019hui, l\u2019Espagne est de loin le premier producteur europ\u00e9en, repr\u00e9sentant environ 70 \u00e0 80 % de la production de l\u2019UE, suivie par l\u2019Italie, le Portugal, la Gr\u00e8ce et la France. Les principales r\u00e9gions espagnoles sont l\u2019Andalousie, Murcie, Valence et Castille-La Manche, o\u00f9 les hivers doux et les \u00e9t\u00e9s chauds et secs offrent des conditions id\u00e9ales pour l\u2019amandier.<br \/><br \/>La plupart des amandes sont cultiv\u00e9es sur des sols secs et rocailleux, souvent en coteaux, des conditions parfaites pour une culture en pluvial, la m\u00e9thode m\u00e9diterran\u00e9enne traditionnelle qui repose presque enti\u00e8rement sur les pr\u00e9cipitations naturelles.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Le cycle de vie d\u2019un amandier<\/strong><br \/><br \/><\/h2>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-28056\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/number-2-image-bp-deep-dive-6-1024x682.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<p>Un amandier commence \u00e0 produire des fruits vers sa troisi\u00e8me ou quatri\u00e8me ann\u00e9e, mais n\u2019atteint sa pleine production qu\u2019au bout de sept \u00e0 huit ans. Une fois mature, il peut produire pendant 40 \u00e0 50 ans.<br \/><br \/>Le cycle d\u00e9bute \u00e0 la fin de l\u2019hiver, lorsque les fleurs roses ou blanches apparaissent avant les feuilles. La pollinisation, essentielle, d\u00e9pend en grande partie des abeilles. Au printemps, le fruit (la coque) se forme autour de l\u2019amande.<br \/><br \/>La r\u00e9colte a lieu entre ao\u00fbt et octobre, selon les r\u00e9gions et les vari\u00e9t\u00e9s. Lorsque la coque s\u00e8che et s\u2019ouvre, les agriculteurs secouent les arbres, \u00e0 la main ou \u00e0 l\u2019aide de machines, pour faire tomber les amandes. Elles sont ensuite s\u00e9ch\u00e9es, d\u00e9cortiqu\u00e9es, puis parfois \u00e9cal\u00e9es avant d\u2019\u00eatre stock\u00e9es ou vendues.<br \/><br \/>Apr\u00e8s la r\u00e9colte, les arbres entrent en repos : ils perdent leurs feuilles et amorcent leur dormance hivernale, p\u00e9riode id\u00e9ale pour la taille.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>L\u2019eau et les amandes : une culture pas toujours \u201cassoiff\u00e9e\u201d<\/strong><br \/><br \/><\/h2>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-28063\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/image-3-deep-dive-1024x683-4.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<p>Les amandes ont souvent la r\u00e9putation d\u2019\u00eatre gourmandes en eau, en grande partie \u00e0 cause de la production californienne, qui repr\u00e9sente environ 80 % des amandes mondiales et d\u00e9pend fortement de l\u2019irrigation.<br \/><br \/>Mais en Europe, la situation est diff\u00e9rente. En Espagne, en Italie et au Portugal, de nombreux producteurs cultivent les amandes en pluvial, profitant simplement des pluies m\u00e9diterran\u00e9ennes. Les arbres s\u2019adaptent ainsi \u00e0 la s\u00e9cheresse et produisent des fruits plus petits, mais souvent plus savoureux.<br \/><br \/>Dans les syst\u00e8mes irrigu\u00e9s, on utilise surtout le goutte-\u00e0-goutte ou l\u2019irrigation contr\u00f4l\u00e9e, en apportant de l\u2019eau uniquement pendant les p\u00e9riodes cl\u00e9s comme la floraison ou la formation du noyau. Ces m\u00e9thodes permettent de trouver un \u00e9quilibre entre rendement et \u00e9conomie d\u2019eau.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Le march\u00e9 des amandes : une histoire mondiale<\/strong><br \/><br \/><\/h2>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-28070\" src=\"https:\/\/www.crowdfarming.com\/what-the-field\/wp-content\/uploads\/2025\/12\/image-4-deep-dive-1024x683-4.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<p>\u00c0 l\u2019\u00e9chelle mondiale, la production est domin\u00e9e par la Californie, suivie de l\u2019Australie et du bassin m\u00e9diterran\u00e9en. L\u2019Europe importe la majorit\u00e9 des amandes qu\u2019elle consomme, principalement des \u00c9tats-Unis, qui repr\u00e9sentent environ 60 \u00e0 70 % des volumes consomm\u00e9s dans l\u2019UE.<br \/><br \/>L\u2019Espagne exporte une partie de sa production, notamment les <a href=\"https:\/\/www.crowdfarming.com\/en\/search?q=almonds&amp;tab=boxes&amp;sort=date&amp;scrollToProjects=true%3Futm_source%3Dblog&amp;utm_medium=referral&amp;utm_campaign=week_almonds&amp;utm_term=article\" target=\"_blank\" rel=\"noreferrer noopener\">vari\u00e9t\u00e9s locales de qualit\u00e9<\/a> comme la Marcona et la Largueta, tr\u00e8s pris\u00e9es en p\u00e2tisserie et confiserie.<br \/>Mais dans l\u2019ensemble, l\u2019Europe reste importatrice nette, la demande continuant de cro\u00eetre plus vite que la production locale.<br \/><br \/>Tandis que la Californie mise sur un mod\u00e8le \u00e0 fort volume et standardis\u00e9, les amandes europ\u00e9ennes valorisent la diversit\u00e9 des saveurs, les vari\u00e9t\u00e9s traditionnelles et la tra\u00e7abilit\u00e9, visant un march\u00e9 plus haut de gamme.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Comment conserver et savourer les amandes<\/strong><br \/><br \/><\/h2>\r\n\r\n\r\n\r\n<p>Les amandes se conservent le mieux dans un endroit frais, sec et \u00e0 l\u2019abri de la lumi\u00e8re.
