D\u00e8s le VIe si\u00e8cle av. J.-C., les Romains cultivaient d\u00e9j\u00e0<br \/>\n        de nombreuses vari\u00e9t\u00e9s en Europe.<br \/>\n        Aujourd\u2019hui, la r\u00e9colte s\u2019\u00e9tend de la fin de l\u2019\u00e9t\u00e9 \u00e0 l\u2019automne.<\/p>\n<h3><b>Vari\u00e9t\u00e9s europ\u00e9ennes populaires<\/b><\/h3>\n<p>Parmi les milliers de vari\u00e9t\u00e9s existantes, environ 25 sont cultiv\u00e9es commercialement. Le climat vari\u00e9 en Europe<br \/>\n        offre une grande diversit\u00e9 de pommes, chacune avec ses caract\u00e9ristiques.<\/p>\n<p><b>Gala :<\/b><span style=\"font-weight: 400;\"> Originaire de Nouvelle-Z\u00e9lande (ann\u00e9es 1930). Douce, croquante,<br \/>\n            l\u00e9g\u00e8rement florale\u202f; parfaite \u00e0 croquer.<\/span><\/p>\n<p><b>Golden Delicious :<\/b><span style=\"font-weight: 400;\"> D\u00e9couverte \u00e0 la fin du XIXe si\u00e8cle en<br \/>\n            Virginie-Occidentale. Douce, jaune dor\u00e9, tr\u00e8s polyvalente.<\/span><\/p>\n<p><b>Reinette :<\/b><span style=\"font-weight: 400;\"> Ancienne vari\u00e9t\u00e9 europ\u00e9enne avec de nombreux types r\u00e9gionaux.<br \/>\n            L\u00e9g\u00e8rement acidul\u00e9e, tr\u00e8s aromatique. Conservez-les au r\u00e9frig\u00e9rateur, loin des autres fruits, afin<br \/>\n            qu\u2019elles restent croquantes plus longtemps.<\/span><\/p>\n<p><b>Comment \u00e9viter l\u2019oxydation :<\/b><span style=\"font-weight: 400;\"> ajoutez un peu de jus de citron aux pommes<br \/>\n            coup\u00e9es en morceaux pour ralentir l\u2019oxydation et leur conserver leur aspect frais. <\/span><\/p>\n<p><b>Que faire avec les pommes ab\u00eem\u00e9es :<\/b><span style=\"font-weight: 400;\"> si vous avez quelques pommes qui<br \/>\n            commencent \u00e0 s\u2019ab\u00eemer, ne les jetez pas ! Pr\u00e9chauffez le four \u00e0 180\u00b0C et tapissez une plaque de cuisson de papier<br \/>\n            sulfuris\u00e9.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2. Dans un grand bol, combinez la farine, le sucre, la cannelle, la muscade, le<br \/>\n            piment de Jama\u00efque, la levure chimique et le sel.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3. R\u00e2pez le beurre congel\u00e9 \u00e0 l\u2019aide d\u2019une r\u00e2pe \u00e0 bo\u00eete, puis utilisez deux<br \/>\n            couteaux ou le bout de vos doigts pour le frotter l\u00e9g\u00e8rement dans le m\u00e9lange de farine jusqu\u2019\u00e0 ce qu\u2019il<br \/>\n            ressemble \u00e0 des miettes grossi\u00e8res.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4. Dans un autre bol, fouettez l\u2019\u0153uf, le k\u00e9fir et l\u2019extrait de vanille.<\/span>\n    <\/p>\n<p><span style=\"font-weight: 400;\">5. Pelez et coupez la pomme en d\u00e9s, puis incorporez-la au m\u00e9lange humide.<\/span>\n    <\/p>\n<p><span style=\"font-weight: 400;\">6. Ajoutez les ingr\u00e9dients humides aux secs, en m\u00e9langeant doucement jusqu\u2019\u00e0 ce<br \/>\n            qu\u2019ils soient juste combin\u00e9s. La p\u00e2te doit \u00eatre un peu grumeleuse et non trop travaill\u00e9e.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">7. Versez la p\u00e2te sur une surface farin\u00e9e et divisez-la en deux boules.<br \/>\n            Aplatissez chacune en un cercle d\u2019environ 2,5 cm d\u2019\u00e9paisseur, puis coupez-le en 6 quartiers.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">8. Disposez les <\/span><i><span style=\"font-weight: 400;\">scones<\/span><\/i><span\n            style=\"font-weight: 400;\"> sur la plaque pr\u00e9par\u00e9e et enfournez pendant 18 \u00e0 20 minutes, ou jusqu\u2019\u00e0 ce qu\u2019ils<br \/>\n            soient dor\u00e9s.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">9. Pendant que les <\/span><i><span\n                style=\"font-weight: 400;\">scones<\/span><\/i><span style=\"font-weight: 400;\"> refroidissent l\u00e9g\u00e8rement sur<br \/>\n            une grille, pr\u00e9parez le gla\u00e7age en fouettant ensemble le sucre glace, le sirop d\u2019\u00e9rable, la vanille et le<br \/>\n            lait d\u2019amande jusqu\u2019\u00e0 obtenir une texture lisse.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">10. Arrosez les <\/span><i><span style=\"font-weight: 400;\">scones<\/span><\/i><span\n            style=\"font-weight: 400;\"> de gla\u00e7age une fois qu\u2019ils ont refroidi pendant environ 20 minutes. D\u00e9gustez<br \/>\n            ti\u00e8des ou \u00e0 temp\u00e9rature ambiante.<\/span><\/p>\n<h3><strong>G\u00e2teau aux pommes et \u00e0 la cannelle<\/strong><\/h3>\n<p>Pr\u00e9par\u00e9 avec des pommes cuites, du cidre de pomme, des \u00e9pices de saison comme la cannelle et la muscade, et<br \/>\n        recouvert d\u2019un gla\u00e7age \u00e0 la cannelle et au sucre.<\/p>\n<p><strong>Ingr\u00e9dients:<\/strong><\/p>\n<p><strong>Pour le g\u00e2teau:<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">-3 petites pommes Reinettes (environ 300 g en d\u00e9s), environ 200 g une fois<br \/>\n            \u00e9tuv\u00e9es<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-180 ml de cidre de pomme<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-80 ml de miel<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 gros \u0153uf<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-80 ml d\u2019huile d\u2019olive<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 cuill\u00e8re \u00e0 caf\u00e9 d\u2019extrait de vanille<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-130 g de farine d\u2019amande<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-75 g de farine d\u2019avoine<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 \u00bd cuill\u00e8re \u00e0 caf\u00e9 de cannelle moulue<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bc cuill\u00e8re \u00e0 caf\u00e9 de muscade moulue<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u215b cuill\u00e8re \u00e0 caf\u00e9 de piment de Jama\u00efque<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00bd cuill\u00e8re \u00e0 caf\u00e9 de sel<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 cuill\u00e8re \u00e0 caf\u00e9 de levure chimique<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-1 cuill\u00e8re \u00e0 caf\u00e9 de bicarbonate de soude<\/span><\/p>\n<p><strong>Pour la cro\u00fbte de sucre \u00e0 la cannelle:<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">-1 \u00bd cuill\u00e8re \u00e0 soupe de cassonade fonc\u00e9e<\/span><\/p>\n<p><span style=\"font-weight: 400;\">-\u00be cuill\u00e8re \u00e0 caf\u00e9 de cannelle moulue<\/span><\/p>\n<p><strong><br \/>\n            Pr\u00e9paration:<\/strong><\/p>\n<p><span style=\"font-weight: 400;\">1. Chauffez une petite casserole \u00e0 feu moyen. Coupez les pommes en d\u00e9s et<br \/>\n            ajoutez-les \u00e0 la casserole. Apr\u00e8s une minute, versez le cidre de pomme et portez \u00e0 l\u00e9g\u00e8re \u00e9bullition.<\/span>\n    <\/p>\n<p><span style=\"font-weight: 400;\">2. Une fois que \u00e7a bouillonne, r\u00e9duisez le feu \u00e0 doux, couvrez et laissez mijoter<br \/>\n            pendant 20 \u00e0 25 minutes, en remuant de temps en temps, jusqu\u2019\u00e0 ce que la majeure partie du liquide se soit<br \/>\n            \u00e9vapor\u00e9e et que les pommes soient tendres. \u00c9gouttez et r\u00e9servez les pommes (vous pouvez garder le cidre<br \/>\n            restant pour une autre recette ou une boisson chaude).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">3. Pr\u00e9chauffez le four \u00e0 180\u00b0C et graissez l\u00e9g\u00e8rement un moule \u00e0 pain avec de<br \/>\n            l\u2019huile ou tapissez-le de papier sulfuris\u00e9.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4. Dans un grand bol, fouettez le miel, l\u2019\u0153uf, l\u2019huile d\u2019olive et l\u2019extrait de<br \/>\n            vanille jusqu\u2019\u00e0 obtenir une texture lisse. Incorporez les pommes \u00e9tuv\u00e9es.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">5. Dans un autre bol, fouettez la farine d\u2019amande et d\u2019avoine, la cannelle, la<br \/>\n            muscade, le piment de Jama\u00efque, le sel, la levure chimique et le bicarbonate de soude.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">6. Incorporez doucement les ingr\u00e9dients secs au m\u00e9lange humide jusqu\u2019\u00e0 ce qu\u2019ils<br \/>\n            soient juste combin\u00e9s (\u00e9vitez de trop m\u00e9langer). Dans un grand bol, combinez l\u2019huile d\u2019olive, le jus de citron, le parmesan<br \/>\n            r\u00e2p\u00e9, l\u2019ail, le sel et le poivre. Fouettez jusqu\u2019\u00e0 consistance lisse et r\u00e9servez.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2. Lavez et s\u00e9chez les choux de Bruxelles.
