Une fois par an, le premier dimanche de septembre, Manuela ouvre les portes de sa ferme \u00e0 tous les clients qui ont adopt\u00e9 une ch\u00e8vre chez elle. <\/p>\n<p data-path-to-node=\"5\">Les ch\u00e8vres sont traites deux fois par jour pour que le lait cru soit transform\u00e9 en fromage directement sur place. Le lait n&rsquo;\u00e9tant pas pasteuris\u00e9, la production est soumise \u00e0 des contr\u00f4les tr\u00e8s stricts, afin de pr\u00e9server l&rsquo;activit\u00e9 bact\u00e9rienne naturelle du lait cru. Dans les ann\u00e9es 1990, l&rsquo;agricultrice a d\u00e9cid\u00e9 de cr\u00e9er sa propre fromagerie sur l&rsquo;exploitation afin de pouvoir contr\u00f4ler chaque \u00e9tape de la fabrication du fromage &#8211; c&rsquo;est la seule fa\u00e7on de garantir une qualit\u00e9 particuli\u00e8rement \u00e9lev\u00e9e.  <\/p>\n<h3 data-path-to-node=\"6\">Comprendre la nature de la ch\u00e8vre<\/h3>\n<p data-path-to-node=\"7\">Manuela souligne qu&rsquo;elle a choisi d&rsquo;\u00e9lever des ch\u00e8vres, contrairement \u00e0 l&rsquo;\u00e9levage habituel qui, dans les ann\u00e9es 90, s&rsquo;orientait principalement vers l&rsquo;\u00e9levage de vaches. \u00ab\u00a0Les ch\u00e8vres \u00e9taient les vaches des paysans pauvres\u00a0\u00bb, nous explique-t-elle. L&rsquo;aspect particuli\u00e8rement passionnant ici est que, contrairement aux moutons, les ch\u00e8vres \u00e9taient originaires de r\u00e9gions montagneuses et n&rsquo;\u00e9taient pas faites pour p\u00e2turer de mani\u00e8re classique dans des prairies verdoyantes. Leur syst\u00e8me digestif fragile n&rsquo;est pas con\u00e7u pour recevoir de grandes quantit\u00e9s de fourrage frais.   <\/p>\n<p data-path-to-node=\"8\">Pour respecter leur biologie, Manuela a d\u00e9velopp\u00e9 un concept sp\u00e9cial : Les animaux vivent dans une \u00e9table spacieuse et a\u00e9r\u00e9e, avec un vaste enclos directement adjacent. Les ch\u00e8vres profitent ainsi de beaucoup d&rsquo;exercice et d&rsquo;air frais, tandis que leur alimentation reste parfaitement contr\u00f4l\u00e9e et adapt\u00e9e \u00e0 leurs besoins. <\/p>\n<p data-path-to-node=\"10\">Notre visite a co\u00efncid\u00e9 avec la p\u00e9riode d&rsquo;accouplement \u00e0 la fin de l&rsquo;\u00e9t\u00e9. Ici, Manuela mise enti\u00e8rement sur le saut naturel : le bouc fait la cour \u00e0 la ch\u00e8vre, la femelle d\u00e9cidant finalement elle-m\u00eame de l&rsquo;accouplement. C&rsquo;est un bel exemple de respect des animaux de la ferme.  <\/p>\n<h3 data-path-to-node=\"12\">Une exp\u00e9rience culinaire<\/h3>\n<p>La situation de la ferme dans une zone volcanique en sommeil constitue \u00e0 cet \u00e9gard un v\u00e9ritable avantage g\u00e9ographique. Les sols riches en min\u00e9raux de l&rsquo;Eifel offrent une base id\u00e9ale pour un fourrage particuli\u00e8rement riche en nutriments. La nouvelle cave vo\u00fbt\u00e9e montre \u00e9galement que l&rsquo;exploitation ne cesse d&rsquo;ameillorer : encore en construction, elle offrira bient\u00f4t le climat parfait dans lequel les meules de fromage pourront m\u00fbrir jusqu&rsquo;\u00e0 la perfection.  <\/p>\n<p data-path-to-node=\"13\">Aucune visite \u00e0 la Vulkanhof ne serait compl\u00e8te sans une d\u00e9gustation.
