Questo \u00e8 stato il momento chiave in cui Johannes ha deciso di fare ricerche sulla quinoa e, soprattutto, di scoprire se questo pseudo-grano potesse essere coltivato anche in Germania. Insieme al co-fondatore Simon, dopo la laurea specialistica, ha capito subito che era cos\u00ec.  <\/p>\n<p data-path-to-node=\"5\">Abbiamo raggiunto l&#8217;ultimo giorno di raccolta della stagione. Soprattutto nelle giornate calde e secche, la quinoa deve essere raccolta rapidamente dal campo. L&#8217;umidit\u00e0 \u00e8 il nemico principale, perch\u00e9 potrebbe danneggiare immediatamente il delicato raccolto: una vera sfida in questa estate umida. La particolarit\u00e0 del metodo di Johannes \u00e8 che la quinoa viene essiccata direttamente dopo la raccolta e non lavata. Questo non solo permette di risparmiare enormi quantit\u00e0 di acqua, ma richiede anche pochissima energia. Questo processo impedisce la formazione di muffe e prepara perfettamente i chicchi per la successiva lavorazione senza danneggiare inutilmente l&#8217;ambiente.     <\/p>\n<p data-path-to-node=\"9\">L&#8217;agricoltore ci racconta che la domanda di quinoa in Europa, e in particolare in Germania, \u00e8 iniziata pi\u00f9 di 10 anni fa e che questo ha causato grandi difficolt\u00e0 economiche agli agricoltori delle regioni andine. Sono state create aree di coltivazione su larga scala per soddisfare la crescente domanda dall&#8217;estero, per cui le strutture economiche locali si sono spostate a tal punto che la quinoa non \u00e8 quasi pi\u00f9 accessibile come alimento di base. <\/p>\n<p data-path-to-node=\"13\">Johannes e Simon hanno deciso di ampliare la loro gamma di prodotti, che ora include prodotti innovativi come la mortadella vegana e il muesli croccante di quinoa, a dimostrazione della versatilit\u00e0 di questo cereale regionale.
