"Nos fromages sont le produit final d'un travail familial et historique; de génération en génération, nous élevons nos vaches laitières dans la vallée d'Hergarai, porte d'entrée de la Forêt d'Iraty par Saint Jean Pied de Port.
En 2022, nous intégrons notre fils Maxime au Gaec et accueillons avec lui son projet de transformer notre lait sur l'exploitation. Son diplôme de fromager en poche, il sillonne la France pour importer les meilleurs savoir-faire fromagers.
Du pré à l'assiette, nos fromages sont l'aboutissement de notre histoire."
